A major mixed-use development may soon rise in place of the iconic Pig Stand diner in San Antonio, marking the end of an era for the historic site.
GrayStreet Partners has proposed a redevelopment of the property that would include a hotel, multifamily housing, and food and beverage establishments. The firm is seeking approval to build 100 multifamily units per acre, which would allow for up to 37 residential units on the 0.372-acre site.
Following the demolition of the Pig Stand building, plans call for the construction of a seven-story, 211-key hotel under Marriott International’s midscale AC Hotel brand. The hotel would include 156 parking spaces to accommodate guests.
The hotel’s development team includes Merritt Development Group and DLR Group, who are listed in earlier documents as the developer and operator.
The Pig Stand closed in 2023 after 101 years in operation. Once part of a larger national chain with more than 130 locations, the San Antonio site was the last remaining restaurant of the original Dallas-based franchise, marking a significant chapter in culinary and cultural history.
